Baked Apple Cinnamon Oatmeal

Happy first day of Spring, Everyone! I hope you've all had a great day! It was another beautiful warm and sunny day here, and I was so excited to get my flip flops out of my closet.... that's always a sign that the summer is on its way! Plus it means a trip to the nail salon, which is even better! I had the most delicious breakfast this morning, and just had to share the recipe with you! I made some Baked Apple Cinnamon Oatmeal this morning, and it was ridiculously good! It's sweet, has that warm cinnamon-y taste (and delicious smell!) and the fresh apples add juicy flavor to every bite! Not too long ago I shared my Baked Blueberry and Banana Oatmeal recipe that I love with you, and this one is just as good, if not better! If you're looking for a good breakfast, make this, and you definitely won't be disappointed! Here's the recipe...

BAKED APPLE CINNAMON OATMEAL
(Recipe from Two Peas and a Pod)
*Serves 6 - 8*

YOU WILL NEED:
2 cups rolled oats
1 tsp baking powder
1/4 tsp salt
1/4 cup light brown sugar
1 1/2 tsp cinnamon
1 1/2 cups skim milk
1/2 cup apple sauce
2 egg whites
1 tsp vanilla
1 tbs unsalted butter, melted
1 large apple (a tart apple works well) peeled and diced
1/4 cup raisins
*Optional - pecans, walnuts, dried cranberries


DIRECTIONS:

1. First, peel, core and dice your apple and soak your raisins in boiling water until they are plump, drain them, and then set both the apple and raisins aside. Preheat your oven to 350 deg F, and spray your baking dish with cooking spray (8x8inch pan).

2. Next, in a large bowl, mix together oats, brown sugar, baking powder, salt and cinnamon. In a different, smaller bowl, whisk together the milk, apple sauce, egg whites, melted butter and vanilla. Pour the wet ingredients into the dry, and stir well. Add your diced apples and raisins.

3. Pour the mixture into your baking pan and bake for 20 minutes, until the oatmeal turns beautifully golden brown and no longer jiggles in the center. Serve warm on its own, with some milk or fruit!
